Drying Salt
Solar drying of salt, used in the production of Celtic salt, exposes the vast brine ponds and crystallisers to the atmosphere, bird life and other land-based animals. This inevitably makes the raw salt stockpile susceptible to atmospheric fallout and animal contamination.
From a consumer's point of view, the main problems with Celtic or 'natural' sea salt are contamination and authenticity. The issue of contamination is plain enough, however, its authenticity, by which we mean the presence of the original constituent mineral elements of sea water, is a little more complicated.
The natural salt stockpile is often washed to 'purify' and remove excess magnesium, which renders the salt whiter, cleaner and drier. However, what is lost in the process are many of the other constituent elements of sea salt, which alters its basic ratios and constitution.
An interesting phenomenon known as 'rain washing' or 'natural purification' also takes place in the stockpile. Natural purification is the more accurate description because the process occurs even when there is no rain. Various constituents of the stockpile, principally magnesium, absorb moisture from the air then dissolve, separate and flow out of the stockpile, dissipating into the ground. Dilution and separation of constituent salts occurs naturally in a crystal stockpile but, once again, this changes the ratio and constitution of the salt. The subtlety of this difference should not be overlooked or taken for granted.
